After due further experimentation:
How to make cake in a mug in a microwave, without gluten, dairy, egg, or soy. (Or many other things.)
5 tablespoons of some kind of flour--I like 4 rice, 1 oat, but variation is the source of entertainment. 3 rice, 1 2/3 millet, 1/3 oat is another one I've tried. I like the texture of rice flour, so I use it; I also like the texture of millet, but it has a flavor I don't love. I don't really like the texture of oat, but a little bit can be nice.
1/8 teaspoon baking powder or so.
1/16 teaspoon xanthan gum. Seriously, this stuff sticks it together really well. You don't have to use much.
Stir resulting heap of dry ingredients.
Put in slightly less than half of one serving-size cup of applesauce. This is a few--three or four--good spoonfuls, depending on the size of your spoon.
Pour in maple syrup until you have thoroughly drowned the applesauce. Stir. Put in a few dried cranberries, if you so desire. Stir again.
Don't worry that it seems too liquidy for cake batter.
Go upstairs and microwave it: the microwave may shut off automatically at two minutes and a bit, but this is apparently an appropriate time for this cake to cook. (If you have a microwave with no timer switch on its outlet, it is acceptable to time it for, oh, two minutes and fifteen seconds or so.)
Eat.
(My list for the grocery store runs: cinnamon, vanilla, possibly fruit?, real sugar?, real jar of applesauce.) (Ooh, I wonder what it'd be like if I put jam in it!)
Every time I make one of these it is better than the last. Just think, by the time I graduate I will be making fabulous Cake Inna Mug in the microwave!
